Chicken Teryaki with Asian Slaw

This is a lovely quick, tasty and healthy meal for lunch or dinner. The salad here uses mainly raw vegetables which add great texture and crunch to the dish. This also prevents any loss of nutrients that can be destroyed with hot temperatures that occur in cooking giving you an excellent dose of antixoxidants and vitamins. INGREDIENTS:

CHICKEN:

4 fillets of chicken

1 thumb of grated ginger

2 crushed garlic cloves

1 tbsp honey

1 tbsp soy sauce

2 tbsp sesame oil

2 tbsp olive oil

1 tbsp rice vinegar


ASIAN SLAW

Shredded cabbage,

Carrot grated

Red pepper,

Broccoli chopped

Slices spring onion,

Edamame beans


DRESSING

2 tbsp Olive oil

2 tbsp honey

1 tbsp grated ginger

1 tbsp soy sauce

1 clove of chopped garlic

1 hefty tbsp of Harrys nut butter (magic ingredient



METHOD:


  1. Marinade chicken in all of the listed ingredients for 30 minutes. Heat up a pan add chicken mixture and stir fry for 20 minutes

  2. Mean while mix all of the salad vegetables with the the dress and let it marinade for 30 minutes to let the vinegar breakdown the cabbage

  3. Serve it all up on its own or with some basmati rice
