When it comes to cooking my mantra is the simpler the better. I personally hate long recipes with list of ingredients I can't even pronounce that requires hours of preparation. Nobody has time for that. This recipes does advise an overnight marinade but even a few hours will do. Then everything goes into the one tray and thats your dinner sorted. No who doesn't want an easy dinner like that?
Ingredients:
6-8 chicken thighs
1 onion
1 pepper
5 medium sized potatoes
2 tsp of paprika
2 tsp Cajun seasoning
2 tsp of chilli
1 tsp cumin
1 tbsp BBQ sauce
Salt and Pepper
Method:
Marinade chicken thighs in 1 tsp paprika, 1 tsp Cajun seasoning, 1 tsp chilli, 1 tsp of cumin and 1 tbsp of BBQ sauce. Ideally leave in fridge overnight but 2-3 hrs will also do
After marinade is complete pop in a roasting tin with onions pepper and potatoes
Add 1 tbsp olive oil and season veg with 1 tsp paprika, 1 tsp Cajun seasoning, 1 tsp chilli and a good shake of salt and pepper
Cook in the oven at 200 degrees for 45 minutes and you are done
Serve with coriander, sour cream, salsa, avocado or even homemade slaw
