Banana Bread Revamp

Yes I am going there. Brings back nostalgic memories of circa lockdown 1.0. But we had too many bananas at home and I hate food waste so here we are! Yes it is ANTOHER banana bread recipes but this one uses oats and ground almonds making it naturally gluten free and extremely delicious and nutty. Its also a very much all in 1 bowl kinda recipe meaning less washing up which is alway a win win. Tag us on socials if you try it out we LOVE to see it!

Ingredients:

150g oats

50g ground almonds

3 bananas

2 eggs

2 tbsp maple syrup

100g dark chocolate

1 tsp vanilla extract


Method:

  1. Preheat oven to 180 degrees

  2. Place oats and and ground almond in food processor/nutri bullet and blitz until resembles a fine flour. Pour into a bowl

  3. Mix banana eggs maple syrup and vanilla in the food processor. Add to the bowl

  4. Chop up the chocolate and add to the mixture

  5. Pour into a lined bread tin. If you want to be reaaally extra slice a banana in half and place on top of the wet mixture

  6. Bake for 45-50 minutes. Let cool and serve
