Spanish Chicken and Chorizo Casserole

Wishing you were eating al fresco in Spain but actually in Ireland eating roast dinner? Don't get me wrong I love a good roast but I would love nothing more than to be sitting in the sun with a glass of wine and big plate of paella! This recipe will help you imagine you are there....maybe just close your eyes in case its raining outside and ruins the moment!




Ingredients:

  • 3 chicken fillets

  • 120g of chorizo

  • 6 cloves of garlic

  • 1 red onion

  • 1 red pepper

  • 2 cans of tomato

  • 2 tbsp tomato puree

  • 1 tbsp paprika

  • 2 tsp chilli

  • 1 tin of cannellini beans

  • Handful of basil

Method:

This is really simple to make.

Two options here on how to cook this dish

  1. Slow cooker method - Add all ingredients into slow cooker and cook on a low heat for 6-8 hrs.

  2. Cooker method - Add all ingredients in to casserole dish and cook for 1.5 hrs at 180 degrees

Serve with crusty fresh bread, wedges or pasta
